Spinach Cheddar Cupcakes
Ingredients:
• 1 1/2 cups all purpose flour
• 2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 6 tbsp butter (melted)
• 1 egg
• 1 cup milk
• 1/2 cup frozen chopped spinach (thawed, drained n squeezed dry)
• 1 cup cheddar cheese
Method:
Preheat oven at 3500F / 1750C
Mix the flour, baking powder, baking soda, salt in a bowl.
Mix the rest of the ingredients in another bowl till they are evenly blended
To it add the flour mixture and form a batter.
Place cupcake cases in cupcake pan and spoon out 2 tbsp batter into each cup and bake for 35 minutes.
Insert toothpick to check whether its done.
Serve immediately
